FAMILY GENERATIONS AND MODERNIZATION

THE WINERY

An innovative path that is respectful of the family’s long winemaking traditions began in 1967 with Giovanni’s father, Alberto. This philosophy led to a complete renovation and modernization of the winery.

The estate continued to follow this path in the 1970s and 1980s under the guidance of noblewoman Countess Elisabetta Balbi Valier, wife of Alberto Ricasoli-Firidolfi. Luigi Veronelli referred to her as the “La Donna del Vinsanto” (The Woman of Vinsanto) for her expertise and passion for the production of this historic wine. A very competent woman who was able to strengthen the path Castello di Cacchiano intended to pursue towards modernizing production techniques both in the vineyards and in the cellar.

ANCIENT ORIGINS

THE AGING CELLAR

The winery is the oldest part of the estate: the foundation clearly has Medieval origins, but once in the underground aging cellars, the stratified layers of soil become visible displaying typical characteristics of the Chianti Classico region with formations of Alberese and Galestro rocks. Temperatures remain at a constant 14 °C (57 °F) naturally, all year round as the cellar is protected by 2-meter-thick stone walls that ensure an optimal aging environment for the wines safeguarded in oak barrels and barriques.
